Step-by-Step Instructions to Rehydrate Your Sourdough Starter

Step 1: Rehydrate the Starter

Day 1: Place 10g of Sparkles into a clean jar. Add 30g of filtered water and stir gently until most of the starter dissolves. Secure the lid, and let the jar sit for 2 hours, allowing Sparkles to absorb the water fully.

• After 2 hours, add 30g of unbleached flour to the jar. Stir until smooth. Secure the lid and place the jar in a warm spot (aim for 70-75°F if possible) to encourage Sparkles to activate.

Step 3: Feed the Starter

Day 2: Check on Sparkles after 12-24 hours. If it’s started to look bubbly or has a slight aroma, it’s time for its first “meal.” Add equal parts flour and water (about 30g each) to the 30g of starter in the jar. Stir well and loosely place the lid.

Step 4: Repeat Feeding Process

Days 3-5: Continue feeding Sparkles every 12-24 hours, always discarding half, back down to 30g of starter, and then adding 30g of flour and 30g of water. Each day, you’ll see more bubbles and a tangy or sweet like banana aroma—signs Sparkles is coming to life!

When Is Sparkles Ready to Use?

After about 4-5 days, Sparkles should be bubbly, active, and ready for baking! To check if it’s ready, you can perform the “float test”: drop a spoonful of starter into a glass of water. If it floats, you’re all set to start baking with Sparkles!

You can find fresh sourdough bread and other bakes at select farmers markets, porch pickups, and pop-ups.

Troubleshooting Tips

No Bubbles?

If Sparkles seems slow to wake up, give it a bit more time or try to keep it in a warmer spot. Starters can be a bit sluggish in cooler environments.

Consistency Issues?

If Sparkles seems too thick or runny, adjust by adding a little more water or flour to reach a thick, pancake-batter-like consistency.
